Cauliflower Hachis Parmentier

Hachis Parmentier is a classical oven dish, combining a layer of creamy potato mash, a layer of minced meat and a layer of ‘sauce lyonnaise’.

 

It’s sometimes called the simpler, French version of a shepherd’s pie.

 

Like any oven dish, it’s quick, easy and if you add another layer of say, vegetables, you have the whole meal cut out for you.

 

In this recipe, I’ll add cauliflower, but you can easily make it with broccoli, zucchini, leek, …

Skin and boil the potatoes for about 10-12 minutes in slightly salted water, so you can mash them. Clean the cauliflower and cut them into little rosettes, boiling them in slightly salted water for about 8-10 minutes. You want them done, with still some bite to them.

 

Mash your potatoes, adding some butter and about 1dl of the milk, until you get a smooth, silken mash. Season with nutmeg, salt and pepper. Drain the cauliflower and set it aside. Bake your ground beef in a pan, until golden brown. Feel free to season it any way you like, whether it is simply with some salt and pepper, or more distinctive with cajun spices, thyme, chili flakes, …

Take a oven-proof dish and start with a thick layer of potato mash. Flatten and smooth it with the back of a spoon or spatula, before adding a layer of minced beef. On top of that comes a third layer, made up out of the cauliflower rosettes. Put them with the stem down, as if you were ‘planting’ them.

 

Now we’ll make a quick cheese sauce to top it all. We’ll start by making a roux by melting the butter and adding the same amount of flower, whisking until it all mixes. Slowly add the milk, whisking all the time to avoid any lumps. Once your sauce starts thickening, take it off the heat and add the grated cheese, continuing to whisk until it all melts together. Season with some nutmeg and pepper.

 

Add your sauce as a final layer and slide the dish into the oven, you preheated to about 180 degrees Celsius (That’s about 350 Fahrenheit) . Put it on grill and leave it until you get a nice golden crust on your cheese sauce.Because you boiled or baked all of the layers already, your dish will be ready in just a short while in the oven.
